<p><img class="alignright" title="100foodsspread" src="http://www.ourstate.com/wp-content/uploads/2010/08/100foodsspread4.jpg" alt="100foodsspread" width="376" height="188" />Rob Rooks, a self-described “explorer” from Greensboro, developed a deep respect for the Taos Boat at Coyote Kitchen while he was a student at Appalachian State University. No, this isn’t some version of a whitewater raft; it is, as he describes it, “cornbread, sweet potatoes, black beans, chicken, fried plantains, and tomatoes, smothered with Monterey jack cheese and ‘guac.’ If they’re out of the pineapple salsa that day, go home and don’t come back till they have it.”</p>
<p>Unselfconsciously hip, the kitchen specializes in what they call “Southwest Caribbean Soul food” and offers “antibiotic and hormone-free meat options, eco-friendly ocean fishes, vegetarian and vegan dining.”</p>
